Cottage Cheese and Spinach Lasagna Ingredients
- 500g ground beef
- 500g cottage cheese
- 1 pack frozen spinach
- 1 onion, finely chopped
- 1 leek, finely chopped
- 1 bell pepper, diced
- 1 can sundried tomatoes
- 400ml crushed tomatoes
- 9 whole grain lasagne sheets
- 3 tbsp olive oil
- Parmesan or grated cheese (optional)
Recipe
Preheat the oven to 200°C (345°F).
Parboil the pasta sheets in boiling water for 3-5 minutes.
Sauté the meat with onions, leeks, peppers, and sun-dried tomatoes.
Pour crushed tomatoes over the vegetables, then season with salt and black pepper. Allow this to simmer for 10 minutes.
Heat the spinach in a pan, seasoning with salt and pepper. Once warmed, incorporate the cottage cheese into the pan.
Take an oven dish and spoon a portion of the meat mixture onto the bottom, then place 3 pasta sheets on top.
Create layers with the meat mixture, followed by the spinach mix. Repeat these layers – pasta, meat, and spinach – twice more to use up all the meat sauce. Finally, add a last layer of pasta and the remaining spinach mixture on top.
Sprinkle with Parmesan or grated cheese if desired.
Place the lasagna in the oven, on top of an oven tray (to catch any spills), and bake for 30-45 minutes, or until it’s bubbling and browned on top.
